Smoked Pork Back Ribs

It was certainly no accident that the tastiest animal in the world is the pig. Hundreds of thousands of years of it’s own brand of evolution dubbed “survival of the deliciousest” have been both purposeful and effective. Let’s celebrate this creature’s achievement with slow and even heat.
Ingredients
- 2 Slabs of pork back ribs
- 1/2 cup of BBQ Pork Rub
- 1/3 cup brown sugar
- Salt to taste
- Splash of Apple Juice
- BBQ Sauce
- Hickory and Apple Wood Smoke Chips
Directions
There are a few methods to this, you can;
A) Use indirect heat on a bbq, this can be achieved by strategic burner selection, or something as easy as a pizza stone
or B, the real way) Use a Smoker
Remove the membrane from the underside of the ribs, make a small cut under the membrane at one corner, and pull the membrane off with your hands. Doing this will allow seasonings to permeate both sides of the meat. Rub both sides with BBQ Pork Rub, salt and brown sugar (only use sugar if you are able to cook on indirect heat!!!). Cook at 200°F for 4 hours over chucks of hickory and apple wood. Remove ribs and wrap in foil, splashing them with apple juice before you seal it up. Cook for an additional 30 minutes for tender, or 1 hour for fall off the bone. Lather in a neutral bbq sauce and cook for 5-10 more minutes.
