Eggs and Potatoes

I was hungover and hungry. I wanted eggs but I didn’t have no bread to put it on. But I did have….POTATOES!!! Eggs? Potatoes? Same pan? Yes. Yes I did.
1 large potato per person, grated
1 egg per person, beaten with a whisk till doubled in volume
Fresh sage, oregano and chives to taste, chopped
Salt and pepper
1 slice of ham per person, chopped
1 tsp preferred cooking oil per potato
1/2 a small onion per potato, chopped
You gotta put them onions in a pan with that oil and them fresh ‘erbs. Let ‘em sizzle some. Then squeeze the water off your potatoes till they don’t squeeze no more. Add salt to ‘em now cos you ain’t gonna get a better chance later. Put them in the pan too. Cook awhile but make sure you stir it up good every once in awhile or your potatoes are gonna get burned. Once they are cooked sprinkle that ham on top. Then pour them whipped eggs on top and don’t touch it till the eggs settle on their own. Figure out a way to flip it after about five minutes cos nobody likes raw eggs on top of potatoes in a pan. When you think it’s cooked – eat it.
