A dish often destroyed by very white fathers, cooking the meat until all that can be tasted is the fine leather coat that was sold to a much richer friend.  This dish is crafted with the most medium rare of steaks, and topped with a nearly bruschetta like salsa.  I don’t remember where the thought of this combination came, but I can only assume it was stolen from either Jesus or some restaurant.

2 ribeyes

3 plum tomatos, chopped

9 kalamata olives, pitted, sliced

6 basil leaves, chiffonade

1 tbsp balsamic vinegar

2 tbsp red wine vinegar

4 tbsp extra virgin olive oil

Bbq your steaks as you normally would.  That is assuming you normally cook your steaks without bbq sauce, first of all, that’s not right ever, secondly, it simply will not do for this recipe, use seasoning only here.  Bbq steak to desired doneness, provided it is not beyond medium rare. Let steak rest for 10 minutes after cooking.  Combine ingredients 2 through 7 in a bowl, and add any juices from the steaks left while resting.  Dress steaks with salsa and serve.  What a delight.
